In this episode we make Elderflower Lemonade, a European treat made from the spring flowers of the Elder Tree. We have a tree that was flowering beautifully, but by the time we were ready to make the lemonade, the flowers were gone. So we had to forage! It was an effort to collect the 30 flowers needed for the recipe, but a lot of fun and learning along the way to make one of Bo's childhood favorites. Follow along and make some for yourself. :) xxoo Karen & Bo English recipe Elderflower Lemonade 30 elderflower bunches without stems - 25g citric acid - juice from 1 plastic lemon 500g powdered sugar - 500g icing sugar - 1 liter of boiling water 1/2 t. sodium benzoate Elderflower clusters, citric acid, lemon juice and sugar are mixed and poured over with boiling water. Atamon is added. This infuses for 4-5 days under cover, is strained and stored in atamon-rinsed bottles, it is corked until the next day. It does not have to be refrigerated while standing if it’s not too warm. Danish recipe Hyldeblomst Limonade - 30 hyldeblomst klaser uden stilke 25g Tawana citron syre (3 breve) - saft af 1 citrus nekta plastik citron - 500g stødt melis - 500g puddersukker - 1 liter kogende vand - 1/2 tsk. Atamonpulver Hyldeblomst klaser, citronsyre, citronsaft og sukker blandes og overhældes med kogende vand. Atamon tilsættes.
