I Turned Irish Boxty Into a McGriddle… and It Actually Works

What happens if you turn an Irish potato pancake into a breakfast sandwich? In this video I’m making what I’m calling the McBoxty — a breakfast sandwich inspired by the McGriddle but made with boxty, a traditional Irish potato pancake. Along the way I fell down a rabbit hole learning about the history of Irish food, how potatoes became such a central part of the cuisine, and why dishes like boxty have been staples for generations. To round everything out I added sausage, egg, cheese, and a roasted tomato, mushroom, and bean sauce that accidentally turned into something I’m lovingly calling bean ketchup. The result?
