Hello my fellow Chef Knives Enthusiasts. I went to visit Ries Geurts in picturesque Weert. Ries managed to get his hands on and collect a whopping amount of THIRTEEN Keijiro Doi knives. And even two from Kazuo Doi, Keijiro's father. Keijiro Doi is considered to be one of the best to ever do it by Japanese knife connoisseurs. These are not easy to obtain knives. To have amassed a collection of thirteen of these is impressive. And crazy. I mean. How? Why? Is Ries insane? A clever investor? For sure he's addicted! Keijiro Doi passed away in 2017. Keijiro's son, Itsuo Doi, is one of the most recognised blacksmith's from Sakai at the moment. When Itso Doi dies, it will be the end of an era. The Doi knife era.
