Full written recipe - Vrat Ka Paratha (Rajgira ka Paratha) Prep time: 15-20 minutes Cooking time: 20-25 minutes Serves: 4-5 people Ingredients: Dough PEANUTS | मूंगफली 1/2 CUP AMARANTH FLOUR | राजगिरा का आटा 1.5 CUPS / 200 GRAMS WHITE SESAME SEEDS | सफेद तिल 1 TSP ROCK SALT | सेंधा नमक TO TASTE BLACK PEPPER | काली मिर्च 1/2 TSP (FRESHLY CRUSHED) CUMIN SEEDS | जीरा A PINCH GINGER GREEN CHILLI PASTE | अदरक और हरी मिर्च की पेस्ट 1 TSP FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED) POTATO | आलू 1 LARGE SIZED (GRATED) WATER | पानी AS REQUIRED GHEE | घी AS REQUIRED (for cooking) Green Chutney FRESH CORIANDER | हरा धनिया 1 CUP GREEN CHILLI | हरी मिर्च 2 NOS. ROASTED PEANUTS | भुनी हुई मूंगफली REMAINING LEMON JUICE | नींबू का रस OF HALF LEMON ROCK SALT | सेंधा नमक 1/2 TSP SUGAR | शक्कर 1 TBSP CUMIN SEEDS | जीरा A PINCH ICE CUBE | बर्फ 1 NO. (FOR COLOUR) WATER | पानी AS REQUIRED Method: Dry roast the peanuts in a hot pan until the turn golden brown, then transfer them into a bowl & let them cool down completely. Chop the peanuts using a knife or a chopped into a coarse powder, do not make a fine powder. Add the amaranth flour into a large bowl along with add the remaining ingredients of the dough, except for wter then mix all the ingredient using your hands. Further, gradually add very little water & combine all the dry flour, you need the dough to be semi-stiff, it should not be too soft or it will b very challenging to roll it out into a paratha. There is no gluten in amaranth flour so there is no need to knead it a lot. Cover the dough with a slightly damp cloth & let it rest for 10 minutes. Meanwhile, add all the ingredients of they chutney into a mixer jar & grind it into a fine chutney. Before you start rolling the paratha, set a tawa over medium high heat & let it get hot. Take a small portion of the dough & form it into a roundel then slight press it to flatten it. Coat it with some dry amaranth flour & then gently roll it out into a paratha. Once the tawa gets hot, gently lift & place the paratha on the tawa & let it cook from one side over medium high flame, do not add ghee at this stage, cook it dry. Flip the paratha & cook it similarly on the other side until light golden-brown spots start to appear. Then add ghee & cook until both the sides turn golden brown. Your delicious Rajgira Paratha is ready, serve it with the special green chutney & sweet curd.
