舖陳很久的黑森林塔,終於可以端出來給大家聞香!這是我第一次嘗試把蛋糕的口味轉換甜塔,保留重要元素並轉化成不同的形式表現,我覺得超好玩的!巧克力甘納許、巧克力卡士達、蘭姆櫻桃醬、鮮奶油香緹,四層內餡加上巧克力塔皮一起吃,真的超奢華! :食譜: 食材▼ 七吋巧克力塔皮 240 g ●巧克力塔皮食譜:https://bit.ly/3Pbcljn ○巧克力甘納許 苦甜巧克力 100 g 鮮奶油 80 g ○巧克力卡士達 牛奶 250 g 鮮奶油 100 g 糖 50 g 可可粉 10 g 鹽 1/8 小匙 蛋黃 3 顆 玉米粉 25 g 無鹽奶油 25 g 苦甜巧克力 75 g 蘭姆酒 20 g ○櫻桃醬 酒漬櫻桃含液體 300 g ●酒漬櫻桃食譜:https://bit.ly/3OEiiGD 玉米粉 12 g ○鮮奶油香緹 鮮奶油 250 g 糖粉 25 g 香草籽醬 1 小匙 ■中文完整圖文食譜:https://bit.ly/3ECrK7z . I transformed the black forest cake into the version of tart. It still has the essential elements of black forest, alcohol, chocolate, cherry, and whipped cream. Ingredients▼ . 7-inch chocolate crust, 1(240 g) ●Chocolate Crust Recipe: https://bit.ly/3Pbcljn . ○Ganache . bittersweet chocolate, 100 g heavy cream, 80 g . ○Chocolate Custard . milk, 250 g heavy cream, 100 g sugar, 50 g cocoa powder, 10 g salt, 1/8 tsp egg yolk, 3 cornstarch, 25 g unsalted butter, 25 g bittersweet chocolate, 75 g rum, 20 g . ○Cherry Filling . rum-soaked cherry, 300 g cornstarch, 12 g ●Rum-Soaked Cherry Recipe: https://bit.ly/3OEiiGD . ○Chantilly Cream . heavy cream, 250 g powdered sugar, 25 g vanilla bean paste, 1 tsp . :Instruction: . ●Making the Ganache 1. Pour heavy cream into a saucepan. 2. Heat it until slightly bubbling. 3. Pour hot heavy cream into the bowl with chocolate. 4. Stir until the chocolate thoroughly melted and mixed well. 5. Pour the ganache into the chocolate crust. Spread the ganache evenly. 6. Cover with a lid and transfer to the fridge. ●Making the Chocolate Custard 7. Add cornstarch and egg yolks into the same bowl. 8. Mix it well and set aside until needed. 9. Add heavy cream, milk, granulated sugar, cocoa powder, and salt into a saucepan. 10. While stirring, heat it until slightly bubbling. 11. Stream 1/3 chocolate cream mixture into the yolk mixture while constantly stirring. Mix it well. 12. Pour all the mixture back into the saucepan. 13. While constantly stirring, cook it over a low heat. 14. While the mixture is hot, add chocolate and butter. Mix it well. 15. Add rum. Mix it well. 16. Remove the tart from the fridge. 17. Pour the chocolate custard into the tart. Spread out the custard evenly. 18. Stick a baking paper on the surface of the custard. 19. Cover with a lid and transfer to the fridge. ●Making the Cherry Filling 20. Add cornstarch and 3 Tbsp of the juice of rum-soaked cherry into the same bowl. 21. Chop the cherry into small pieces. 22. Pour the juice of the rum-soaked cherry and the cornstarch mixture into a flat pan. 23. Mix it well. 24. Add chopped cherry. 25. While stirring, heat it until the mixture thickens. 26. Turn the heat off and let the cherry filling cool down. ●Making the Chantilly Topping 27. Pour heavy cream into a mixing bowl. 28. Add powdered sugar and vanilla bean paste. 29. Mix the mixture manually. Then whisk with an electric mixer until formed peaks. 30. Remove the tart from the fridge. 31. Remove the baking paper from the surface. 32. Add cooled cherry filling to the tart. Spread out the cherry filling evenly. 33. Add whipped cream to the center. 34. Spread out the whipped cream 2 cm away from the edge to avoid covering all the cherry filling. 35. Sprinkle some shaved chocolate on the top. 36.
