Rava(Semolina)- 1 Cup 2. Sugar- 1 Cup to caramelize 3. Ghee- Roasr Rava 2TBS + Fry Dryfruits 2TBS + Final garnish 2 TBS 4. Water- Caramalize 1 Cup + Add while cooking 1 Cup 5. Milk- 1 Litre 6. Spices Cardamom- 6 Nos. Cumin Seeds- 1 teaspoon 7. Dry Fruits- Cashew nuts- 20 Nos. Raisins- 15 Nos. STEPS TO PREPARE 1. For roasting rava(semolina), we can put a pan on stove, add 2 tablespoons of ghee. Once ghee is hot add rava(semolina) and roast until it is light golden colour. 2. We can prepare caramel syrup for this payasam(Kheer). Put a pan on stove, add 1 cup of sugar and caramelize it. Once it if turned to light golden colour add 1 cup of water little by little and make the caramel syrup. 3. Then add 6 pieces of cardamom and 1 teaspoon of cumin seeds into a mixer jar and crush it and keep aside. 4. Now we can fry dry fruits. For that, put a pan on stove, add table spoons of ghee. Once ghee is hot add cashew nuts and roast it until light golden colour. once it is turned to required colour add raisins and fry it for few seconds and keep aside. 5. Now we can put a pan on stove, add one litre milk and boil it. once it is started boiling, add roasted rava(semolina) little by little and mix well. Now we can add 1 cup of water and boil it. Once it is started boiling add kept aside caramel syrup and mix well. Now you can check the sweetness, if required you can add sugar according to your taste. once it is boiled perfectly we can switch off stove. 6. Now we can add 2 tablespoons of ghee and mix well. Then add crushed spices and mix well. Then add fried dry fruits along with ghee used to fry it and mix well. 7.
