Salt and Pepper Tofu Recipe #### Ingredients: **Tofu**: 1 block (firm or extra-firm) **Red Onion**: ½ small, finely chopped **Spring Onions**: 2, finely chopped **Chilli**: 1, finely chopped **Garlic**: 4 cloves, minced **Cornflour**: 5 tablespoons **Baking Soda Powder**: ½ teaspoon **Olive Oil**: 3 tablespoons **Black Pepper**: 1 tablespoon **Salt**: 1 tablespoon #### Instructions: 1. **Prepare the Aromatics**: Cut the *red onion**, **spring onions**, **chilli**, and **garlic* into small pieces and set aside. 2. **Prepare the Tofu**: Using kitchen paper, dry the tofu to remove excess moisture. Cut the tofu into small cubes. 3. **Coat the Tofu**: In a bowl, mix *5 tablespoons of cornflour* with **½ teaspoon of baking soda powder**. Carefully coat each tofu piece in the flour mixture until fully covered. 4. **Fry the Tofu**: Heat *5 tablespoons of olive oil* in a pan over medium heat. Use chopsticks to test the oil's temperature; if it sizzles, it's ready. Fry the tofu pieces for about *3 minutes* or until golden brown. Remove them from the pan and place on a kitchen towel to absorb excess oil. 5. **Sauté the Aromatics**: In the same pan, only keep 2 teaspoons of olive oil**. Add the chopped **red onion**, **chilli**, **garlic**, and **spring onions**. Fry for about **30 seconds**. Stir in *1 tablespoon of black pepper* and **1 tablespoon of salt**, mixing well. 6. **Combine and Serve**: Add the fried tofu to the pan and mix thoroughly, frying for an additional **30 seconds**. Serve immediately, perfect with rice, wine, or beer.
