Made with a wholesome blend of rice flour, poha, suji, fresh veggies, and aromatic Indian spices, these savoury pancakes turn out soft, crispy, and super satisfying. Paired with a refreshing homemade green chutney, this dish is perfect for busy mornings, kid’s tiffins, healthy snacking, or even a light dinner. Simple ingredients, easy steps, and a delicious result — let’s get cooking! ✨ --- Ingredients For the Batter 1½ cup rice flour ½ cup poha (flattened rice) ¼ cup dahi (curd) ½ cup suji 1 small tomato (finely chopped) 1 small carrot (grated) 1–2 green chillies (chopped) 1 small onion (finely chopped) 1 tsp ginger-garlic paste A handful of chopped coriander Salt (as per taste) ½ tsp red chilli powder ½ tsp chaat masala ½ tsp coriander (dhaniya) powder ½ tsp baking soda ½ tsp baking powder Water (as needed) 1–2 tbsp oil (for batter + cooking) For Green Chutney A handful of coriander leaves A handful of mint leaves 1–2 garlic cloves ½ inch ginger 1–2 green chillies 1 tbsp roasted chana 1 big teaspoon dahi Water (as needed) --- Method 1. Prepare the Batter 1. In a mixer grinder, add rice flour, poha, and curd. Blend into a smooth mixture. 2. Transfer this mixture into a bowl. 3. Add suji and mix well. 4. Add all chopped vegetables — tomatoes, carrots, onions, green chillies, coriander, and ginger-garlic paste. 5. Season with salt, red chilli powder, chaat masala, and dhaniya powder. 6. Mix the batter and let it rest so the suji can absorb moisture. 2. Prepare the Green Chutney 1. In a blender jar, add coriander, mint, garlic, ginger, chillies, roasted chana, dahi, and some water. 2. Blend to a smooth, vibrant green chutney. Set aside. 3. Activate & Mix Batter 1. Return to the batter and give it a quick mix. 2. Add baking soda, baking powder, and a splash of water to activate them. 3. Add a little oil and mix everything into a smooth pouring-consistency batter. 4. Cook the Pancakes 1. Grease a pan or tawa with a little oil. 2. Pour a ladleful of batter and spread lightly like a pancake. 3. Cook on medium flame until golden on both sides. 4. Repeat with the remaining batter. 5. Serve Serve the hot, crispy-soft pancakes with your refreshing green chutney.
