A one-pot dinner made in under 30 minutes, our version uses Romano cheese and is served in a can as a nod to the OG Chef Boyardee beefaroni recipe. 🛒 Ingredients: 2 tbsp olive oil, extra virgin, divided 1 lb ground beef 1 onion, diced 1 small carrot, diced 1 celery stalk, diced 2 cloves garlic, finely chopped 1 can tomato paste 1 qt beef stock 1 cup water 1 lb straight-cut macaroni, or ziti 1 cup romano cheese, grated Salt and Pepper Instructions: 1️⃣ Brown the meat: Heat olive oil in a large pot and cook the ground beef until caramelized and just cooked through. Remove the beef and set aside. 2️⃣ Saute the mirepoix: Return the pan to medium-high heat, drizzle with oil and cook the carrots, celery, and onion until softened. 3️⃣ Brown the tomato paste: Stir in the tomato paste and cook until darkened and it begins to stick to the bottom of the pan. 4️⃣ Finish the sauce: Pour in the beef stock and water, then blend the sauce until completely smooth. 5️⃣ Add the beef and noodles: Bring the sauce to a boil then stir in the browned beef and the noodles. Cook until the noodles are al dente, then stir in the cheese.
