Made with soft aubergines, onion, tomato, a touch of tomato paste, warm spices like turmeric and cumin, and chilli flakes for gentle heat, it’s finished with coriander. Perfect for busy days when you want something nourishing, cosy, and homemade – without complicated steps or a long cooking time. 🌶 Ingredients: 4 small or 1 medium aubergine/eggplant 1 medium onion 2 medium tomatoes 1 teaspoon of tomato paste 1/2 teaspoon of turmeric 1/2 tsp crushed cumin 1/2 tsp chilli flex optional 3 tablespoons of olive oil Handful of fresh coriander 1/2 teaspoon of salt 🍽 How to enjoy: Serve with rice, flatbread, or enjoy it on its own as a light, comforting dish. Full recipe step-by-step 1-Heat up pan over a medium heat add chopped onion and olive oil. 2-Sauté onion until soft and fragrant. 3-Add chili flakes, cumin, turmeric and garlic and ginger stir for one minute. 4 -Add the diced tomatoes and cook until softened. 5-Add tomato paste and salt mix well . 6- Cover the pan until the tomatoes soften 7-Add diced aubergine/eggplant into the pan and mix well cover the pan cook for 2min 8- Add a bit of water put the lid back on and reduce the heat and let the aubergine/ eggplant plant simmer untill tender 9- sprinkle chopped coriander for fresh into the sauce .
