Mutton Paturi Recipe | Meat Paturi | Paturi with Mutton | Slow Cooked Mutton Mat Paturi Paturi is the beloved of all the Bengali foodies! Most of us have only heard about Bhetki Paturi or Ilish Paturi while very few of us have heard about Chicken Paturi! But have any of you ever heard of Mutton Paturi or Meat Paturi? Well, today’s recipe is an innovative and unique one for all Mutton lovers. This is an ancient and eco-friendly culinary technique to wrap food, specifically meat or fish in leaves and then roast, grilling or steam. The leaves trap the steam and flavours in as the food cooks slowly in its own juice while absorbing the exotic flavour of the leaves as well. Let’s check out what all ingredients you will need to make a flavoursome Mutton Paturi. Boneless Mutton – 300 gm (boiled) 2. Coconut – 1 whole (grated) 3. Mint Paste – 2 tbsp 4. Green Chilli Paste – 1 tbsp 5. Ginger – Garlic Paste – 1 tbsp 6. Black Pepper Powder – 1 tbsp 7. Salt as per taste 8. Banana Leaves 👇 Method to follow 👇 🔸️ For Marination 🔸️ 1. At first, boil the Mutton boneless pieces in a pressure cooker under high pressure (2 – 3 whistles). This will help the meat to soften and quicken the entire cooking process. 2. Now to begin with, we will first marinate the meat. For that, take the boiled Mutton pieces into a bowl, add some Salt, Black Pepper Powder, Ginger – Garlic Paste, Grated Coconut, Mint Paste, and Green Chilli Paste. Mix all the ingredients properly with the meat. 3. Then, add some Gondhoraj Lemon zest and juice – if you do not have Gondhoraj Lemon, regular Lime can be used. We have used Gondhoraj Lemon specifically to enhance the savoury taste. 4. After mixing everything evenly, cover the bowl and refrigerate for at least 30 – 40 minutes. 🔸️ Preparing the Leaves 🔸️ 1. While the Mutton is chilling inside the refrigerator, let us move on to the next step. 2. We will cut the Banana leaves into a rectangular shape as per the size of the Mutton pieces we are using. 3. Then grease each leaf with Mustard Oil to avoid cracking while folding. After greasing, gently toast the Leaves on medium flame one by one. 🔸️ Cooking Method 🔸️ 1. After 30 – 40 minutes take the Mutton out from the refrigerator. Pick one piece at a time and place it in the middle of a Banana leaf followed by a Mint leaf on the top. 2. Then fold the leaf into a square parcel to make sure the meat pieces are entirely covered. Then tie the parcel using a cotton string. Remember not to use any kind of synthetic string as it might cause food poisoning. 3. Repeat the same process for all the pieces. 4. You can use any idly maker to steam cook these Paturis or take enough water into a normal pan and place a steel sieve or chalni that fits the pan. 5. Then let the water come to a perfect boil, before placing the Paturis one by one on top of the sieve. 6. Close the pan with a heavy lid and let the Paturis steam for 40 – 45 minutes in full flame. 7. Our freshly prepared Mutton Paturi will be ready to be enjoyed with steamed rice.
