तवा वांगे मसाला बनवण्यासाठी लागणारे साहित्य • काही वांगी • तेल • १/२ चमचा मोहरी • १/२ चमचा जिरं • १/४ चमचा हिंग • बारीक चिरलेला कांदा • काळ तिखट • लाल तिखट • चवीनुसार मीठ • थोडंसं पाणी • २~३ चमचे भाजलेल्या शेंगदाण्याचं कूट • १/२ चमचा गूळ (ऐच्छिक) • बारीक चिरलेली कोथिंबीर . Ingredients: • Vangi • Oil • 1/2 tsp Mustard seeds • 1/2 tsp Cumin seeds • 1/4 tsp Hing • finely chopped onion • Kal tikhat • Salt to taste • Water • 2~3 tsp roasted Peanut powder • 1/2 tsp Gudh (Optional) • Finely chopped Coriander leaves Method: • Wash vangi really good and chop off the steam, remove thorns. • You can keep the thorns of you like. • Chop vangi into 4 pieces and cut across into 8 pieces. • Transfer the pieces into water. • Heat up oil in a pan and add mustard seeds. • When mustard seeds pop up and cumin seeds and let them splutter. • Add hing, garlic and fry for about a minute. • Add chopped vangi and fry for about a minute. • Add kanda lasun masala, red chili powder, salt and mix everything well together. • Add water and mix well. • Cover and cook on medium heat for about 5 minutes. • Remove the kid and add a little more water. • Mix well and again cover and cook for about 6-7 minutes. • You can add potato if you want. If you want to add potato then add it first in tadka, cook for about 10-12 minutes and then add vange. • Remove the lid and check if vange is cooked. • Add roasted peanut powder, gudh and mix well. • You can skip gudh if you don’t want. Adding gudh is optional. • Fry for another 3-4 minutes. • Turn off the gas and tawa masala vange is all ready. • Garnish with coriander leaves. • This can be a good lunch box option. It goes well as side dish with rice too.
