Tomato chutney or sabzi is a very easy and simple recipe. You can make it in very few ingredients and in a jiffy. If you don’t have sabzi at home then this can be a good lunch box option. Ingredients: • 2 tsp Oil • 1/2 tsp Mustard seeds • 1/2 tsp Cumin seeds • 7~8 finely chopped Garlic cloves • 8~10 Curry leaves • 8~10 Fenugreek seeds • A pinch of Hing • 1/2 cup finely chopped Onion • 1 tsp Goda masala • 1 tsp Red chili powder • 5 medium size chopped Tomatoes • Salt to taste • 1 tbsp Roasted peanut powder • 1 tsp Jaggery • Finely chopped Coriander leaves Method: • Heat up oil in a pan. • Add mustard seeds and let them pop up. • Add cumin seeds and let them crackle. • Add garlic, curry leaves, fenugreek seeds, a pinch of hing, onion and mix well. • Fry on medium heat until it gets light golden color. • Add goda masala, red chili powder and mix well. • Fry for about a minute or two. • Add chopped tomatoes, salt to taste, and mix well. • Cover and cook on medium heat until tomatoes cook nice and soft for about 5 minutes. • You can cook more if you want to make it puree. • Add roasted peanut powder, jaggery and mix well. • You can use sugar in place of jaggery. • Cook for 2-3 minutes more. • Add a lot of coriander leaves and mix well. • Tomato chutney or bhaji is already. • You can have this with fulka, chapatti. • It goes well with rice too.
