This week’s video begins with a special delivery — each Christmas I add a meaningful set to my collection, and this year it’s a beautiful pair of canisters, a tray, and matching mugs. With the new pieces in place, it’s finally time to decorate our Christmas tree. It’s little Mixie’s first holiday season, and to my surprise… she had absolutely no interest in the decorating at all 🎄Our big cat Jelly Bean came for a snuggle but then left. As the evening settles in, I head to the kitchen to make a creamy chicken spaghetti squash dinner with parmesan asparagus (recipe below ❤️). Afterwards, I begin one of my favorite traditions: painting Christmas kindness rocks to leave on local trails. The next morning we take them out into nature and tuck them along the path, hoping they brighten someone’s day. During the crafting, my mom pops in with a creation of her own — a Christmas tree made from thrifted crystal bowls and a bell. To thank her, I make a batch of Christmas bark and deliver it to her home. It was lovely to spend time with you 💕 Until next week — from our home at Taigh Nadair to yours. 🏡 🌲 Creamy Chicken Spaghetti Squash with Parmesan Asparagus Ingredients For the Spaghetti Squash & Chicken: 3 chicken breasts, cut into bite-sized pieces Salt, pepper, and preferred seasonings (to taste) 1 spaghetti squash Olive oil 1 block cream cheese (use half per squash half) 1 cup mini tomatoes, chopped For the Asparagus: 1 bunch asparagus Olive oil Salt, pepper, and seasonings of choice Grated parmesan Instructions 1. Prepare the Chicken Preheat oven to 400°F (or your preferred temperature). Cut chicken breasts into small pieces, season to taste, and place on a baking sheet. Bake until fully cooked, then remove from the oven and set aside. Prepare the Spaghetti Squash Slice the spaghetti squash in half lengthwise and scoop out the seeds. Brush or drizzle the inside with olive oil, salt, and pepper. Place half a block of cream cheese into each half of the squash. Add the chopped mini tomatoes into the center. Place the squash in the oven to bake alongside the chicken. Once the squash is tender, remove it from the oven. Combine Use a fork to scrape and mix the warm squash, cream cheese, and tomatoes together until creamy. Add the cooked chicken pieces into the squash mixture and stir to combine. Plate the spaghetti squash and chicken mixture. Make the Parmesan Asparagus In a heated pan, add a little olive oil. Add the asparagus and season with salt, pepper, and any preferred spices. Pan-fry until tender-crisp. Finish with a sprinkle of grated parmesan Easy Christmas Bark Ingredients 2 milk chocolate bars 2 dark chocolate bars 2 white chocolate bars Toppings of choice (I used peanuts, caramel pieces, and sprinkles) Instructions Prepare the Chocolate Base Preheat oven to 200°F (93°C). Line a baking sheet with parchment paper. Lay out all six chocolate bars on the sheet, arranged closely together. Melt the Chocolate Place the baking sheet in the oven for about 10 minutes, or until the chocolate bars are fully melted. Remove from the oven and gently swirl the chocolates together with a fork to create a marbled effect—don’t overmix. Add Toppings While the chocolate is still warm, sprinkle your toppings evenly over the surface. Peanuts, caramel pieces, sprinkles, or anything festive you enjoy all work great. Chill & Break Transfer the baking sheet to the fridge and let the bark harden completely.
