Cuban Style Roast Pork “Lechon Asado” Recipe : ►6-8 lb. pork shoulder roast with a nice fat cap on it. ►Mojo Criollo Sauce and Marinade- (Can keep in the refrigerator for a week) and (Used for all meats) ►2 heads of garlic- Yes, Really ►1 onion or 1 cup ►1 tsp of oregano ►2 tsp of course sea salt for the mojo and more to liberally apply to the roast about 2 TBS ►1 tsp of black peppercorns crushed ►2 cups of Sour orange or if you can’t find it or if it’s too pricey you can use( Oranges, lemons and Limes) ►1 cup of orange juice Freshly squeezed ►½ cup of lime Freshly squeezed ►½ cup of Lemon Freshly squeezed ►1-1/2 cups of olive oil Preheat oven to 450 and lower to 300 when you put in the pork, Roast for 25-30 minutes per Lb. The lower and longer you roast the pork the crispier the skin. You can go as low as 225 degrees, It will take more time, about 45 minutes per lb.
