It is a must item for the Trivandrum festive sadyas but is now being extended to serve to the other parts of Kerala as well. Boli is served commonly with the palpayasam, palada payasam or semia payasam. A boli is positioned on the banana leaf and a ladle full of paal payasam or semiya payasam will be served on top of it. In no time the milk will be absorbed by the boli making it to melt in your mouth. In North India also similar sweet delicacy is popular, especially in Maharashtra, called Puran or Pooran Boli which is more thicker and slightly differ in the recipe) Ingrediets Chana Dal - 2 cup Maida (All Purpose Flour) - 2 cup Turmeric Powder - 1 tsp Water - as required Sesame oil - 1 cup Pure Ghee - 2 tbsp Sugar - ¾ cup Salt - ½-1 tsp Cardamom powder - 1 tsp Nutmeg powder - ½ tsp Rice Flour (roasted) - 1 cup Method of Preparation 1. Wash the dal and soak overnight. Cook in a pan with enough water until it is well cooked to soft consistency. Don’t overcook to make it mushy. Drain the water through a sieve and keep aside to cool. Grind the dal in the small mixer jar without adding water. Now add 1 tsp of ghee in a pan and add the ground dal and sauté for a minute. Now add the sugar and mix well again which may make the dal mixture to a little loose consistency. Sauté well for a minute and add the cardamom and the nut mug powder and mix very well to spread the spice powders evenly in the dal mixture. Switch off the flame and let the mixture cool. Now make equal lemon size balls with the mixture. 2. Take a bowl and add the flour, turmeric powder, salt. Mix well with the hand. Now make it into a very soft dough by adding water little by little. Now take a deep bowl and keep the dough fully immersed in the sesame oil for ½ hour. Now remove the excess oil from the dough to another bowl and keep aside for making dosa or for greasing the idli moulds. Make the dough into equal balls of gooseberry size. 3. Now press each maida ball into flat piece with the hand and keep a dal mixture ball in the centre of the maida sheet and cover perfectly with the maida sheet and slightly compress with the hand as shown in the video. Dust it in the rice flour and make thin sheets with the rolling pin, applying very light pressure, making sure not to burst the maida sheets to release the dal mixture to come out. Keep each boli on a hot tawa. Once the buddle starts to come on one side, turn the other side and apply ghee lightly. Now turn the other side again and apply ghee lightly.
