An easy and delicious recipe that is a great introduction to the simple style of Nepalese cooking. Ingredients 300g onions 1tsp salt 25ml malt vinegar 2 red chillies, medium hot 150g besan flour (gram flour) 1tsp turmeric Pinch cumin seed Pinch black pepper 10g fresh coriander, chopped 10g spring onions,chopped 1/2 l vegetable oil for deep frying To make the Pyazis Peel and finely shred the onions and sprinkle with salt and vinegar. De-seed the chillies and finely shred. Sieve the besan flour and set aside.Put the rest of the ingredients, including cumin into a bowl and mix well. Add the besan flour and mix until a soft and thick batter is formed and vegetables are completely coated. Scoop out the mixture using either a greased tablespoon or by scooping out with your fingers and flatten the batter slightly to form a rough circle and put onto a lightly greased tray. Heat the oil to a high temperature (170°C) and using a flat spatula or slice, lift the pyazis from the tray and slide gently into the hot oil. Fry until a light golden colour on both sides. Remove, drain on a piece of kitchen towel and serve hot with salsa or chutney.
