Once the bacon is almost completely cooked through, begin cooking the onion. Once the onion begins to turn transparent and is soft (about 3 minutes), combine with the bacon, and draining most of the bacon fat (using about 2 tbsp), place the onion and bacon in a medium skillet. Over medium high heat, add the brown sugar, maple syrup, and vinegar to the bacon and onion. Cook, stirring occasionally until the jam has reduced by half, and is a slow, syrup consistency. Cool just a bit (to where it is comfortable to eat), and enjoy! Note: The jam will harden some after it cools, so to reuse, simply reheat the jam. Should last about a week refrigerated.
