MATAR PATTICE Ingredients 1 ½ cups fresh green peas Salt to taste 2 tbsps oil + for deep frying 1 tsp cumin seeds 1 tsp chopped ginger 2 green chillies, chopped ½ tsp garam masala 4 medium potatoes, boiled, peeled and grated 1 tsp ginger green chilli paste ½ cup breadcrumbs + for coating Oil for greasing 1 ½ cups refined flour and cornflour thin slurry Ketchup for serving Method 1. Heat water for boiling in a deep nonstick pan, add salt and fresh green peas and let it cook for 5 – 6 minutes, drain and refresh it in cold water. 2. Drain and grind into a coarse paste. 3. Heat oil in a nonstick pan, add cumin seeds, ginger, green chillies and sauté for 30 seconds. 4. Add green pea mixture, garam masala and mix well, cook for 2 minutes. 5. Transfer on to a plate and allow it to cool. 6. Take potatoes in a bowl, add salt, ginger green chilli paste, breadcrumbs, mix well. 7. Grease your palms with little oil, take a portion of the potato mixture, make a dent in the center, add a spoonful of green pea mixture. 8. Bring the edges together and shape them into a patty, dip the prepared patty in the slurry and roll them in breadcrumbs evenly, again dip it into the slurry and coat it in breadcrumbs evenly. 9. Heat sufficient oil in a kadai, deep fry the patty until golden brown from all sides. drain on an absorbent paper.
