Tasty Dhokla Recipe (Soft & Spongy) In a bowl, add 1 cup gram flour (besan), ½ tsp turmeric powder, ½ tsp salt, and 1 tsp sugar. Gradually add water and mix well to make a smooth batter. Add 1 packet of Eno fruit salt and gently mix until the batter becomes light and fluffy. Grease a cake mould or any steaming bowl with oil and pour the batter into it. In a pan, add 1 glass of water and place a stand inside. Put the batter bowl on the stand, cover with a lid, and steam on low flame for 25–30 minutes. Check with a toothpick or fork; if it comes out clean, the dhokla is cooked. Let it cool. For the syrup/tempering, heat a little oil in a pan. Add 1 tsp mustard seeds, ½ tsp salt (to taste), and 3 tsp sugar. Pour in ½–1 glass water and cook for 5 minutes. Add juice of 1 lemon and simmer for 2–3 minutes on low flame, then let it cool.
