Making Salt & Straw - The Great Candycopia ice cream at home

Every Halloween, Salt & Straw release their Candycopia ice cream, now it's the Great Candycopia ice cream. I is ABSOLUTELY LOADED with add ins so be aware, also, if you do not live in North America, be prepared to hunt down some ingredients. Snickers, Heath Bars, Whoppers, Reese's Peanut Butter Cups all in a bourbon butterscotch ice cream. It's sounds intense......it is! This recipe is available in their recipe book which you can buy online: https://tinyurl.com/SaltandStrawrecip... https://tinyurl.com/sandsdigitalversion Here's how to make it: The Base: 90g Sugar 45g SMP 1.5g Xanthan gum or stabiliser 45g light corn syrup or golden syrup 470ml Milk at 1.8% 470ml Heavy cream at 35% fat The Butterscotch: 50g Light Brown Sugar 15g Granulated Sugar 15g Corn Syrup 30g Bourbon 60g Heavy Cream 5g Butter Splash of Vanilla Pinch of Salt 2x Snickers Bars 2x Heath Bras 250g Bag of Whoppers 6x Reese's Peanut Butter Cups If I made this again, i'd definately go easier with the add ins and I would add the Butterscotch to the base whilst still warm.
