In this episode 19, we visit the beautiful Kosi Bay (part 1) on the border or Mozambique in the far North-East part of Kwazulu-Natal in South Africa. Kosi Bay forms part of the Isimangaliso Wetland Park, which is South Africa's first Natural World Heritage Site (declared on 1 December 1999). Kosi Bay consists of a four estuarine lake system. There are traditional fish traps used for over 700 years by the Local Thonga people. Not far from Kosi Bay, lies Bhanga Nek, where turtles lay their eggs each year during summer. On the Menu in this video is Seafood Rice. Ingredients: 1 diced onion 3 diced ripe tomatoes 2-3 cloves of crushed garlic 1/2 a green pepper peeled and diced. 4 large spoons of olive oil a bunch of chopped flat leaf parsley a bunch of chopped coriander salt to taste 2 bay leaves 8 Black Mussels 170g of Basmati uncooked rice 250g of Mixed Seafood. Method: Heat the olive oil in a pot. Flavor the oil by frying the garlic and bay leaves for 1-2 minutes Add the onion and fry until light brown/soft. Add the tomato, parsley, green pepper. Cover the pot and cook on low to medium heat for 10 minutes. Add the mixed seafood. Add the uncooked basmati rice. Stir well. Add 1 cup of hot water. Close pot and let rice cook for 10-12 minutes. Place mussels and prawns on top of the rice. Cover the pot and let mussels and prawns steam until cooked (5-7 minutes) on medium heat. Plate up and sprinkle with fresh chopped coriander.
