These cookies are perfect for health conscious people as they contain the goodness of whole wheat, brown sugar, and dried fruits. 00:00 Intro 00:32 What is Biscotti? 01:03 Ingredients required 02:08 Mixing the Dry Ingredients 03:10 Chopping Almonds and Dates 04:31 Adding Wet Ingredients 05:18 Mix & Knead Dry and Wet Ingredients 06:03 Shaping the Dough 07:06 The First Bake 07:32 Cutting into Biscotti 08:50 The Second Bake 09:10 Time to Enjoy! 10:19 Outro Ingredients: 350 grams Whole Wheat Flour 150 grams Brown Sugar (or refined sugar) 4 whole eggs, room temperature 170 grams raw almonds 70 to 80 grams of de-seeded dates (can be replaced with any other dried fruit) 1 Teaspoon of Baking Powder A dash of salt (around 2 pinches) 1/4th Teaspoon Orange Peel Powder (Optional) 1/2 Teaspoon Orange Essence Note: Orange Essence and Orange Peel Powder can be replaced with 1/2 teaspoon of any essence. If you like it simple, use Vanilla Essence. Instructions: Step 1: Mix all dry ingredients in a large bowl (whole wheat flour, brown sugar, baking powder, salt, and orange peel powder). Step 2: Chop raw almonds and dates (or any other dried fruit) and add them to the dry mix. Step 3: Add orange essence and 4 whole eggs, combine together and work towards a knead. Step 4: Once the mix is well combined and kneaded into a ball of dough, shape the dough into elongated flattened rolls, similar to a baguette. Step 5: Bake the rolled out logs of dough in a preheated oven at 180°C (350°F) for 30 minutes, applying heat from the top and bottom in your oven. Step 6: Cool down the baked logs for about 10 minutes, and then cut them into thin long cookies in the familiar shape of a traditional biscotti / cantucci. Arrange them into the same bake tray. Step 7: Bake the cut out pieces for an additional 10 minutes at 180°C (350°F). Remove from the oven, move to a cooling rack, and once your biscotti's are nice and cool, enjoy them with a hot beverage of your choice, or simply by themselves!
