Today I’m sharing a simple, creamy, and comforting Sabudana Kheer that is perfect for fasting days like Mahashivratri or Navratri. Made with minimal ingredients, this kheer comes together quickly and has a rich, delicious flavor without being heavy. It’s lighter than traditional rice kheer but just as satisfying. Enjoy it warm or chilled — a perfect homemade festive dessert! Ingredients: • 1 cup Sabudana (Sago/Tapioca Pearls) • 1 cup Water (for soaking) • 5 cups Milk • ½ cup Sugar (adjust to taste) • 1 tsp Ghee • 10–12 Cashews (broken) • 8–10 Almonds (chopped) • 1 tbsp Raisins • 1 pinch Saffron (optional) • ¼ tsp Green Cardamom Powder Method: 1. Wash sabudana 2–3 times until water runs clear. 2. Soak in 1 cup water for 3–4 hours. There should be no excess water left. 3. Check doneness by pressing a pearl — it should mash easily. 4. Heat 1 tsp ghee in a pan and roast cashews, almonds, and raisins until light golden. Keep aside. 5. In the same pan, lightly roast soaked sabudana in a little ghee for 1–2 minutes. 6. In a deep pan, heat milk. Add sugar and saffron and bring to a boil. 7. Add sabudana and cook on medium heat, stirring continuously. 8. Add cardamom powder and keep stirring to prevent sticking. 9. Cook until pearls turn translucent and kheer thickens. 10. Add roasted dry fruits and mix well. 11. Keep slightly thin, as it thickens more after cooling. 12.
