In the 1880s, the Wisconsin Agricultural Experiment Station began focusing research on measuring butterfat. Agricultural chemist Frederick Short, through his persistent testing, devised a theory of inexpensive and simple measurement of milk fat. The developer and University of Wisconsin professor Stephen Babcock improved this method and refused to patent it. Thanks to this, Babcock's test could be used not only by small dairies, but also by farmers. The Babcock test has become very popular, mainly because of its simplicity, accuracy and effectiveness. And how does the Babcock test work? The test was based on observations by putting sulfuric acid into milk, which dissolves proteins and other components besides fat. By skimming and heating the milk, the fat is separated and floats to the top in a bubble-free layer. Read the fat content on the calibrated neck of the flask and determine the fat content of the milk. Thanks to this method, in 1915 Wisconsin became the leading dairy state in the country, producing more butter and cheese than any other state. And that's all for today's video. Thanks for watching.
