This dish is a lifesaver-ingredients you’ve probably got in your fridge, quick to cook, and done in minutes. Adults love it, kids and grandparents dig it too, plus it’s healthy and looks stunning on the plate. Ready? Let’s dive into this time-saving, delicious recipe! Ingredients (serves 4): - 2 medium potatoes, peeled, cut into small cubes or wedges - 2 salted duck eggs, discard whites, keep yolks, blanched in boiling water, set aside - 1 green bell pepper, seeded, cut into large slices (any color works, green’s extra fresh today) - 1 long red chili, sliced (not the big ones, for color and texture) - 2 tablespoons white sugar - 2 tablespoons cooking oil Method: 1. Boil potato cubes or wedges in water with 1 teaspoon white vinegar or rice vinegar and 1 teaspoon salt for 1 to 2 minutes to remove solanine toxins and boost crispness. Drain and set aside. 2. Heat 2 tablespoons oil in a pan over medium heat, shallow fry potatoes for 6 to 8 minutes until golden and crispy outside, tender inside. Remove and set aside. 3. In the same pan with leftover oil, add blanched salted egg yolks, cook over low heat until they break apart into a fine, golden powder. 4. Toss in potatoes and bell pepper slices, stir-fry to coat potatoes evenly with yolk. 5. Add 2 tablespoons sugar, stir until melted, then turn off heat. 6.
