Place them in a bowl, sprinkle with a pinch of salt, and toss gently. Let sit for 10–15 minutes to release excess moisture. Slice the onion into thin half-rings. In a small bowl, combine the onion with the apple vinegar, a pinch of salt, and black pepper. Let it marinate while the cucumbers rest. After resting, gently rinse the cucumbers under cold water to remove excess salt. Pat dry thoroughly with a paper towel. In a large bowl, combine the cucumbers and marinated onions (including the vinegar). Add the brown sugar, soy sauce, olive oil, crushed red pepper, and sesame seeds.
