Baked Creamy Spinach Dip - A Favorite Classic Appetizer Everyone Loves!

Baked Creamy Spinach Dip 2 packages (12 ounces each) frozen chopped spinach, thawed 1 Tablespoon butter 2 garlic cloves, minced or 2 teaspoons already minced 1 Tablespoon all-purpose flour 1 can (12 ounces) evaporated milk 1/2 cup grated Parmesan cheese, divided 2 ounces cream cheese 1/4 cup ricotta cheese 1/4 teaspoon ground nutmeg 1/2 teaspoon salt 1/4 teaspoon pepper Bagel chips, crackers and/or Tostitos chips Preheat oven to 350° Squeeze dry the spinach, reserving one cup spinach liquid. In a large saucepan, heat the butter over medium heat. Add the garlic and flour to make a roux. Cook about one minute. Whisk in evaporated milk and spinach liquid. Whisk in the cream cheese, ricotta cheese, 1/4 cup Parmesan cheese, nutmeg, spinach, salt and pepper. Cook and stir until blended and slightly thickened. Transfer to a 1 1/2 quart baking dish. Bake at 350° for 25 to 30 minutes or until bubbly, and the top is lightly browned. Top with the remaining Parmesan cheese and bake an additional 4 to 5 minutes, or until the cheese is melted.
