A massa choux foi desenvolvida por um dos pasteleiros de Catarina de Médici, Popelini, um tanto por acaso. No século XVI, Popelini preparou um Popelin, um bolo feito de massa seca no fogo, "massa quente". O seu nome mudaria para massa choux 200 anos depois, depois de a receita ser aperfeiçoada por Jean Avice, chef pasteleiro de Talleyrand, e pelo seu discípulo, Antonin Carême. Foi ele quem desenvolveu a versão final da massa choux, que ainda hoje é utilizada em muitas receitas, inclusive na de chouquettes.
