I love marshmallows and I’m very excited to share a recipe on how to make marshmallow without corn syrup. It’s my first time making it and I’m very pleased with the result. You can make this vegan by replacing gelatin with agar powder. ------------------------------------------------------------------------------ Homemade marshmallows without corn syrup Ingredients 1 ½ cups sugar ½ cup water 3 tablespoons unflavored gelatin powder (3 teaspoons agar-agar powder or 3 tablespoons agar flakes for vegan option) + ½ cup water Optional: vanilla essence, mint extract, or any flavors you like Corn flour (cornstarch), potato starch, or icing for dusting Directions o In a small bowl, add water to gelatin and stir until dissolved. Set aside. o In a saucepan, add sugar and ½ cup water. Stir to mix them. o Turn on stove and on medium low heat, boil your sugar and water. o Once the sugar is completely dissolved, and it starts bubbling rapidly, boil for a few more minutes then turn off heat. o Transfer this syrup to a mixing bowl and add the gelatin that you dissolved earlier. o Stir until gelatin is melted into the syrup. o Be careful as this syrup is hot. You can wait for five minutes to let it cool down a bit before beating with electric mixer. o I recommend preparing your surface before beating the syrup and gelatin. o Either line your baking tin with parchment paper or apply some oil on the surface. Sprinkle one of the following: corn flour (cornstarch), icing sugar, or potato starch on the surface of your baking tin. Set this aside. o Using an electric mixer, beat the syrup and gelatin mixture, alternating between low and medium speed. o At this point you can add a few drops of vanilla essence, mint extract or any flavors you like. o Keep beating. This could take anywhere from 12-15 minutes. o Once the mixture reaches a toothpaste consistency, it should be done. o Pour your thick marshmallow mixture into your baking tin. Pat it down evenly. o Put in fridge for about 3 hours for the marshmallow to set. o After 3 hours, remove your marshmallow from the baking tin and sprinkle more corn flour or icing on your marshmallow. o Apply a teaspoon of oil on your hand and lightly coat your knife with the oil as well.
