Vegan Baked Brie Prep Time: 15 Minutes Cook Time: 35 Minutes Total Time: 50 Minutes Yield: 1 Baked Brie 1 cup (100g) Frozen Blueberries 1 tbsp (15g) Maple Syrup 1 Sheet Vegan Puff Pastry 1 Vegan Brie ( • VEGAN BRIE // Cashew Base // Breaking Chegan ) 2 tbsp (20g) Chopped Pecans Blueberry Compote: Add frozen blueberries and maple syrup to a medium saucepan. Simmer over medium-low heat until the mixture thickens. Transfer to a bowl and let cool. Place a sheet of puff pastry onto a clean work surface. (I used a sheet round with a 9” diameter) Place brie in the middle of the pastry. Cut slices into the puff pastry around the brie. Add the blueberry compote and chopped pecans on top of the brie. Pull each piece of the pastry up onto the brie, overlapping as you go around the circle. Place the wrapped brie on a parchment lined baking sheet and brush with almond milk.
