Recipe Makes 15 very large pieces. Ingredients: For the shortbread: 200g butter, room temperature 100g sugar 275g plain flour For the caramel: 200g butter 397g sweetened condensed milk 45g sugar 85g golden syrup For the chocolate topping: 320g milk chocolate 15g white chocolate Directions: Preheat the oven to 180c and line a 23cm X 23cm baking tin. In a large bowl cream together the butter and sugar for the shortbread base. Add the plain flour and mix until combined. It might still be crumbly, but you will be able to push it into the base of the baking tin and it will come together. Pour the dough into the baking tin and evenly press it into the base. Make sure that the whole base is covered, then bake in the centre of the oven for 20-22 minutes. The shortbread should just be turning golden when you remove it from the oven. Place on the side and allow to cool. Meanwhile, make the caramel. In a large saucepan, heat the butter, sugar, golden syrup and sweetened condensed milk over medium heat. Once the butter and sugar have melted, turn up the heat slightly and allow the mixture to boil until it turns golden and thick. This will take a while, make sure that you constantly stir the mixture else it will burn to the saucepan. Once the mixture has thickened, pour it over the shortbread base and smooth it out to an even layer. Place in the fridge to set for 1 hour. Temper the milk chocolate, or melt it in the microwave. Melt the white chocolate and place it in a piping bag. Pour it over the caramel and smooth it out to an even layer. Drizzle the white chocolate over the milk chocolate and use a toothpick to feather it. Place in the fridge to set for 2 hours. Remove from the fridge and heat a very sharp knife. Cut the millionaire shortbread into 15 even slices, or more if you wish to have smaller slices!
