A Bols sales representative came to Yee asking for a drink made with the company’s blue curaçao liqueur and the Blue Hawaii is the result of his tinkering. Yee was also known for possibly being the first to add banana to a Daiquiri as well as his extravagant and unique garnishes. Apparently the original was shaken but it was commonly served frozen too. The original also called for sour mix so I opted for a house made sour mix with equal parts of lemon, lime and simple. INGREDIENTS 22.5mL White Rum (0.75 oz) 22.5mL Vodka (0.75 oz) 22.5mL Blue Curacao (0.75 oz) 90mL Pineapple Juice (3 oz) 22.5mL House Sour Mix (0.75 oz) METHOD 1. Combine all the ingredients into your cocktail shaker 2. Shake with ice 3. Strain into a cocktail glass with crushed ice 4. Garnish with a pineapple wedge, cherry and umbrella HOUSE SOUR MIX: 1 Part Fresh Lemon Juice 1 Part Fresh Lime Juice 1 Part Simple Syrup BLUE HAWAIIAN COCKTAIL The Blue Hawaiian is a variation on the Blue Hawaii but I’d argue that it more closely resembles a Pina Colada than a Blue Hawaii. According to Simon Difford, it was PROBABLY created by Don the Beachcomber in Los Angeles. This drink can be served frozen or on the rocks - I prefer to serve it on crushed ice as I’m not a big fan of frozen drinks. INGREDIENTS 45mL White Rum (1.5 oz) 22.5mL Blue Curacao (0.75 oz) 22.5mL Cream of Coconut (0.75 oz) 60mL Pineapple Juice (2 oz) METHOD 1. Combine all the ingredients into your cocktail shaker 2.
