Khatkhate (NRI friendly) | Goan Mixed Vegetable Stew | Goan Food Recipe Traditional Khatkhate in Goa uses pumpkin, tendlis, ghosale, mulo, mundlyo, raw papaya, corn, ambade, saango but I've prepared it using the vegetables that I can easily find in the grocery stores in the US. The basic concept is the same no matter what veggies you use. Pressure cook hard to cook stuff and direct cook vegetables that have less cook times. This prevents Khatkhate from becoming a mush. Khatkhate is a no oil dish. It is perfectly suitable for Vegans and Vegetarians. Important Notes: Absolute must for this dish: Tefal / Sichuan Pepper Size of vegetables - Slightly big chunks Allergy info: Contains Coconut Serves: 10-12 people Ingredients: ( Use whatever you have but here is a breakdown of what I used ) Vatana - 1/4th cup Toor dal - 1/2 cup Bhikna/Jackfruit seeds - handful Tefal/Sichuan Pepper - a small handful Jaggery Powder - 2 tablespoons ( adjust per taste ) Kokum/sola - 4-5 Freshly grated coconut - 2 cups ( I used thawed frozen fresh ) Turmeric powder - 1 spoon, divided Red Chilli Powder - Per taste, divided ( I've used 1 spoon ) Tamarind - marble sized ball Water - 2 cups for soft veggies + as needed Salt Soft Veggies: Butternut Squash : 4 cups cubed Vaingi/Brinjal - 2 cups Cucumber - 1 heaping cup Dhabbu Mirchi/Bell pepper - 1 cup Zucchini - 2 cups Broccoli - 1 cup Cauliflower - 1.5 cups Hard Veggies: Carrots - 1 cup Valpapdi/Green beans - 1 cup Potato - 3/4th cup Method: 1. Soak vatana for 3 hours. 2. Soak Toor dal for an hour. Also soak jackfruit seeds if using dehydrated. 3. Pressure cook vatana, dal, bhikna and hard Veggies. Add salt, tumeric pdr and chilli pdr to enhance taste while cooking. 4. Grind coconut, turmeric, chilli powder, tamarind with water and set aside. 5. Bring 2 cups water to a boil along with some salt. Cook soft Veggies adding them in the order listed below with turmeric pdr and chilli pdr. See video. Butternut Squash - 3 mins Cauliflower, Cucumber, Brinjal - 1 min Remaining veggies - 9 -10 mins 6. Add ground paste, jaggery, kokum and tefal and let it come to a final boil.
