SQUASH TYPE FRITTERS – serves 2 INGREDIENTS 100g Grated Tromboncino or Courgette (Zucchini) or Squash 1 Finely chopped tomato 1 Finely chopped onion 3TBSP of flour or more if your mix is too runny. 2 Beaten eggs Salt & pepper to taste Plus any extras like Mustard, Cheese, Ham etc Cooking oil METHOD Mix all the ingredients in a bowl Add enough flour to bind the mixture together (add more flour if the mixture is still runny). Season to taste. Heat the cooking oil in a frying pan. Spoon dollops of the mixture into the oil and cook for 1-2 minutes on each side, until golden.
