The bold garlic aromas of foraged ramps (the wild leeks that pop up in spring) make them a perfect pairing for the deep, funky flavors of a homemade kimchi recipe. Throughout fermentations, ramps maintain their brilliantly green color. Ramp leaves become silky and tender and retain their own unique flavors atop the kimchi paste, while the bulbs (if you choose to include some) stay crunchy and pungent. In this video recipe, Erica from FarmSteady will show you how to make homemade ramp kimchi using sustainably harvested ramps and kimchi paste made from scratch. A quick note on sustainable foraging: We love ramps, but their fevered popularity has led to some scary harvesting practices that puts this wild crop at risk. If you’re harvesting them in the wild, use a foraging knife to remove the leaf from the stalk, leaving at least one leaf on each plant and the bulbs and roots in the ground so that it has a chance to spread more tasty ramps 🌱 If you’re picking them up at the farmer’s market, talk to the farmer to make sure they are sustainably harvested, and support leaf-only vendors too so farmers know there is a market for both. If you’re still not quite sure what ramps are, you might know them by another name. They’re called different things in different places. Here are some other names they might go by: wild leeks, wood leeks, wild onions, spring onions, and ramsons. The scientific name for ramps is Allium Tricoccum. They’re native to North America and pop up April through late-May (depending on where you live). And if you can’t find ramps, this recipe works great with chives too.
