Trying something a little different! Can I make an ASMR video in my terribly noisy apartment? Well I tried!! Ingredients: 10-15 ramps (~140g; 5oz) 1 small carrot 1 small apple 1/4 cup salted shrimp saeujeot, 새우젓, finely minced 1 tablespoon fish sauce myulchiaekjeot, 멸치액젓 3 cloves garlic ⅛-¼ cp glutinous rice flour, cornstarch, or all purpose flour 1 cp water 2 tbsp gochugaru 1 tbsp gochujang (optional) ¼ cp rice vinegar (optional) Salt & water for brine (overnight recommended) Clean glass jar INSTRUCTIONS: Wash the ramps thoroughly. Trim bulbs. Dissolve ⅛-¼ cp salt in a large bowl with as much water as needed to cover the ramps. Soak the ramps in the salted water under a weight, overnight if possible. Peel and trim the carrot. Peel and core the apple. Peel and trim the garlic. Make the rice paste: Whisk ¼ cp glutinous rice flour, cornstarch, or AP into 1 cp water. Heat over stove, whisking constantly until thick. Remove from heat and cool to room temperature. Grate the carrot. Slice the apple into whatever shape you desire. I did sticks. Mince the garlic. Make the filling/marinade: Mince ¼ cp of the fermented shrimp until it becomes a watery paste. Add this to a medium sized bowl. Add 1 tbsp fish sauce, 2 tbsp gochugaru, 1 tbsp gochujang, minced garlic, and cooled rice paste. Stir until the paste is even. Then add carrot and apple and stir again until everything is coated. Stuff the kimchi: Drain and rinse the ramps. In the same large bowl add the filling/marinade and working from bulb to leaf tip, completely coat. Bend the stem gently and twist the leaf around the neck of the bulb to create a knot. Repeat for all ramps. Stuff the jar: Load the ramps into the jar and gently press down. Pour any remaining juices into the kimchi jar. Make sure to completely cover the kimchi by pressing it down and covering with a weight if possible. Use plastic wrap and a lid to seal the jar. Leave the kimchi jar at room temperature for 1-3 days.
