Chicken Satay Recipe With Peanut Sauce | Grilled Chicken Skewers

This is my super easy chicken satay recipe with peanut sauce. Satay is the quintessential South East Asian street food and it is my favourite. It can be made from any meat – chicken, pork or beef – but it is marinated with lots of spices and aromatics and grilled until it is nicely charred! The traditional accompaniment is peanut sauce as well as chunky cucumber, onions and compressed rice cake (Lontong). Ingredients 1. 500g-1kg Chicken Thigh 2. 1-2tsp Ground Coriander 3. 1-2tsp Ground Cumin 4. 1-2tsp Ground Turmeric 5. ½-1tsp White Pepper 6. 1-2tbsp Galangal 7. 2-3 Lemon Grass paste 8. 2-4 Garlic Cloves 9. 2-4 Shallots 10. 1 Lime 11. 1-2tbsp Kecap Manis 12. 1-2tsp Honey 13. A dash of Fish Sauce 14. Salt & Vegetable Oil I have travelled throughout Indonesia, Malaysia and Thailand and, frankly, the best satay you will ever eat will be from the rural, countryside areas. It is very difficult to exactly recreate the yummy taste of satay in the west because, I guess, it is difficult to replicate the freshness of ingredients, cooking methods and just the overall heat and climate. But we can get quite close! There are plenty of reasons why you should want to make satay apart from the fact it is delicious. It is a fantastic appetiser and it is great for parties and barbecues. Satay should be nicely charred but still succulent but, if you over-grill the meat, the peanut sauce will make your satay skewers taste delicious regardless. As I say, my recipe is super easy and better still, I got all the ingredients from my local supermarket including lemongrass paste and galangal.
