Cinder Toffee Recipe 250g. caster sugar 100g. golden syrup 10g. bicarbonate of soda Place the sugar and golden syrup in a heavy based saucepan over a medium heat and melt the two together gently; use a wooden spoon to carefully mix together and then once combined let it bubble away. Once the mixture has reached 150-155 degrees Celsius take it off the heat and vigorously stir in the bicarbonate of soda until the mixture is a lovely golden colour. DO NOT TOUCH IT AS IT WILL BE VERY HOT. Pour the mixture into a tray with a piece of non-stick baking parchment in it and leave to cool and set for 1-2 hours; then break up and enjoy!
