Add yogurt and starter and mix until all combined - will be quite sticky Knead onto floured surface adding more flour as you go until itβs totally smooth Cut into four pieces and let rest for at least 15 minutes Squash out into as even a shape as you can get it or roll it out with a rolling pin / wine bottle Heat pan until very hot and add a small amount of oil Once oil shimmers add flattened piece of dough and wait for it to puff up and get brown on the bottom.
