Become an Earthy Goodness Kitchen Insider and support the channel 💚 / earthygoodnesskitchen Breakfast Sausage Recipe (Complete instructions within ingredients list before starting the method) Makes roughly 10 sausages at 70g each 5.8g protein and 4.7g fiber per sausage Ingredients: 50g walnuts (soaked in boiling water for 30 minutes) 50g roasted peanuts (soaked in boiling water for 30 minutes) 1 white onion, finely chopped 300g mushrooms, diced small (I used chestnut mushrooms) 3 medium garlic cloves, finely chopped 1 400g canned green lentils, rinsed and drained thoroughly (265g) 25g porridge oats 10g nutritional yeast 1 tsp tamari or dark soy sauce 1 tsp marmite ½ tsp liquid smoke 1 small apple, grated (I used a Braeburn apple) Spice mix: 1 tsp fennel seeds, toasted and ground 1 tsp mustard seeds, toasted and ground 1 tsp smoked paprika 1 tsp dried sage 2 tsp dried oregano 2 tsp dried thyme ¼ tsp ground mace ¼ tsp ground nutmeg Method: Heat up a medium frying pan over a medium heat. Add 1 tbsp olive oil and once hot add the onion and mushrooms. Fry for 8-10 minutes stirring occasionally until caremalised then add the garlic and fry for a further 2 minutes stirring regularly. Add to a large bowl and set aside. Drain the walnuts and peanuts and add to a food processor. Add the lentils, oats and nutritional yeast and blend until broken down into a crumb. It should hold together when compacted. Add to the large bowl. Add the soy sauce, marmite, liquid smoke, and the spice mix. Then add the apple, squeezing out some of the moisture and mix to combine thoroughly. Season with salt and pepper as needed. Add more blended oats, ground almonds or flour if the sausages are too wet. Shape into sausages, roughly 70g each. Dip your hands in water to help stop the mix from sticking to your hands. Heat up a medium frying pan over a medium-high heat. Once hot add the sausages and fry on each side for 2-3 minutes until golden all over. Alternative brush the sausages with oil and air-fry at 200C for 12 minutes, turning half way through.
