Join the Earthy Goodness Kitchen Community: / earthygoodnesskitchen ------------------------------- 👨🍳 MY KITCHEN ESSENTIALS Non-Slip Cutting Board Mat - https://amzn.to/4n6GKze Microplane Zester - https://amzn.to/4m7TC6N Chopping board oil - https://amzn.to/42uRa3f A quick heads up: these are affiliate links, so if you buy through them, I may earn a small commission (thanks so much for supporting my work!) ------------------------------- RECIPES IN VIDEO: Shredded Mexican Tofu Ingredients Tofu: 280g extra-firm tofu, coarsely grated or thinly sliced (about 3mm) (≈ 10 oz / about 1¼ cups packed once shredded) ½ tbsp cornflour (4g / 1½ tsp) 1 tbsp Mexican seasoning (≈ 8g / 1 tbsp) Sauce: 1 tsp Mexican oregano ½ tbsp maple syrup (≈ 10g / 1½ tsp) 1 tsp chipotle paste (≈ 5g / 1 tsp) 1 tbsp tomato purée (≈ 15g / 1 tbsp) 50ml orange juice (≈ 3 tbsp + 1 tsp) Juice of ½ lime (≈ 1 tbsp) ¼ tsp liquid smoke Air-Fryer Method Add the tofu to a bowl, coat with 1 tsp oil. Add cornflour + Mexican seasoning and toss. Air-fry at 190°C (375°F) for 10–12 min, until golden and crisp around the edges. Whisk the sauce ingredients. Add sauce to tofu and return to the air-fryer for 5–8 min, until sticky and glazed. Oven Method Preheat oven to 200°C / 400°F. Spread seasoned tofu on a lined tray. Bake 18–22 minutes, flipping halfway, until crisping at edges. Pour sauce over tofu, mix, spread again. Bake 8–10 minutes more, until sticky and coated. Frying-Pan Method Heat 1 tbsp oil in a large non-stick pan. Add seasoned tofu and fry 6–8 minutes, stirring occasionally until golden/crispy. Pour in the sauce and cook 3–5 minutes until thick, glossy and coating the tofu. Sesame Glazed Sticky Tofu Ingredients Tofu: 280g extra-firm tofu, torn (≈ 10 oz / about 1¼ cups torn pieces) ¼ tsp turmeric ½ tsp black pepper 1 tbsp cornflour (≈ 8g / 1 tbsp) Sauce: 15g fresh ginger, minced (≈ 1 tbsp) 2 garlic cloves, minced 2 spring onions (white sliced; green for garnish) 1 tsp sesame oil 75ml pineapple juice (≈ 5 tbsp) 1 tbsp maple syrup (≈ 1 tbsp) 1 tbsp light soy sauce (≈ 1 tbsp) 2 tsp toasted sesame seeds 1 tsp arrowroot or cornflour Juice of ½ lime (≈ 1 tbsp) Air-Fryer Method Toss tofu with 1 tsp oil, turmeric, pepper, and cornflour. Air-fry at 190°C (375°F) for 8–10 min until crisp at edges. Sauté ginger, garlic, and spring onion (white part) in 1 tbsp oil for 30 sec. Whisk remaining sauce ingredients and add to pan; cook 1 min until glossy. Add tofu and coat. Garnish with spring onion greens + sesame seeds + lime. Oven Method Preheat oven to 200°C / 400°F. Spread coated tofu on a lined tray. Bake 18–20 minutes, flipping halfway, until crisping. Heat sauce in a pan the same way as above. Toss oven-crisped tofu in the sauce. Finish with garnishes. Frying-Pan Method Heat 1–2 tbsp oil in a non-stick pan. Add coated tofu and fry 8–10 minutes until golden on multiple sides. Remove tofu temporarily. Sauté aromatics 30 sec, add sauce mixture, cook 1 min. Return tofu, coat and reduce to sticky glaze. Tofu “Ricotta” Ingredients 300g firm tofu (≈ 10.5 oz / about 1⅓ cups crumbled) Juice + zest of 1 lemon (≈ 3 tbsp juice) 2–3 tbsp nutritional yeast 1 medium garlic clove 1 tsp dried oregano 1 tsp dried thyme 1–2 tsp white miso 3 tbsp olive oil Method Add all ingredients to a food processor and pulse until it resembles wet sand (classic ricotta texture).
