Drain the dal and grind it to a smooth paste using very little water. The batter should be thick and fluffy. Add salt, chopped ginger, and green chili to the batter and mix well. Make the vadas: Heat oil in a deep frying pan. Wet your hands with water and take a small portion of the batter. Flatten it slightly and slide gently into the hot oil. Fry until the vadas turn golden brown and crispy from both sides. Remove from oil and drain excess oil on a paper towel. Soak the vadas: Take some lukewarm water in a bowl and add a pinch of salt. Drop the fried vadas into the salted water and let them soak for about 20-30 minutes. Prepare the yogurt mixture: Beat the yogurt well until smooth. Add salt, sugar (if using), roasted cumin powder, and red chili powder. Mix well. Assemble the Dahi Vadas: Squeeze the excess water from the soaked vadas and arrange them on a serving plate. Pour the beaten yogurt mixture over the vadas, covering them entirely. Drizzle tamarind chutney and mint chutney over the yogurt. Sprinkle roasted cumin powder, red chili powder, and chaat masala on top. Garnish with chopped coriander leaves and serve. Serve: Serve chilled and enjoy the delicious Dahi Vadas! Feel free to adjust the spices and chutneys according to your taste preferences. Enjoy your homemade Dahi bhaly ‪@shiningstar.subscribe7471‬ ‪@afshantahir6916-b8z‬ @a256751
