Khatri Puri to eat with mutton Tapelu or chicken Tapelu : These Puris are specially made to serve with Khatri mutton Tapelu or Chicken Tapelu. This is made from wheat flour and fermented with Eno or instant dry yeast. Soft, crispy and puffed puris are from Khatri cuisine. Ingredients: 1. Wheat flour. 300 gms 2. Oil and water to prepare dough. 3. ENO 1 unflavoured pouch of 5 Gms or 1 Tspoon instant dry yeast. 4. Salt to taste (almost 1 Tspoon) 5. Cumin seeds (jeera). 1 Tspoon 6. Oil to fry puris. Method: 1. Take 300 gms. Wheat flour in a large dish. 2. Add 1 Tspoon cumin seeds (jeera) 3. Add salt to taste (almost 1 Tspoon) 4. Add 2 tablespoon oil . Mix well. 5. Now slowly add water little by little and knead to make make soft yet firm dough. Add a few drops of oil in process. 6. The dough should be firmer than roti dough for puffier Puris 7. Cover the dough with butter paper or thin plastic sheet. Put small dish on it. 8. Keep aside for 2 hours so that fermentation take properly. 9. After resting divide the dough into small equal sized balls . 10. Lightly grease rolling surface and roll puris into circular shape. Diameter should be about 2”. Puris should be neither too thin nor too thick. 11. Now heat sufficient oil in frying pan (Kadai) on medium high flame. 12. Test oil by dropping 2-3 puris into oil. If rises quickly, oil is ready. 13. Slide one by puris in Kadai. Flip and fry until golden. 14. Remove and transfer to a dish. 15. Similarly fry another batch. 16.
