PLEASE SUBSCRIBE AND CLICK THE 🔔 FOR NOTIFICATIONS... 😁😍 Recipe: BAJAN TURNOVERS Preheat oven at 350º and bake for 16-18 minutes DOUGH MIXTURE 1 ¾ Cups All Purpose Flour 1 Cup Self Rising Flour 1 Tbspn Instant Yeast ¼ Cup Warm Water (115º) ¾ Cup Warm Evaporated Milk (115º) 1 Large Egg ¼ Cup or 4 Tbspns Unsalted Butter (Room Temperature) ¼ Cup Light Brown Sugar Extra Brown Sugar for sprinkling 1 Tbspn Unsalted Butter for brushing (melted) P.S. Add about a tablespoon of sugar to the warm water then add the yeast, give it a mix and set aside. (The sugar and warm water mix with the yeast helps to create the fermentation process) Directions In a bowl sieve the flour and whisk to incorporate well; In a separate small bowl put about 1 and a half tablespoons of the flour for kneading and set bowls aside. In a large mixing bowl, cream the butter and remaining sugar until well creamed; add the egg and mix well; add the milk and yeast mixture and mix well; add the flour in thirds and mix well. When the dough mixture has come together; transfer out onto a lightly floured surface and knead for 2-3 minutes and shape the dough into a ball and place into a lightly oiled bowl, cover with plastic wrap and a tea towel and place in the microwave or warm place and let sit for about 1 hour until doubled in size. FILLING FOR MIXTURE 3/4 Cup of Water 2 Cups Finely Grated Coconut ½ Cup Brown Sugar 1 Tspn Cinnamon ½ Tspn Nutmeg (Freshly Grated) 1 Tspn Almond Extract Directions for Filling Mixture In a small saucepan, pour in the water, the grated coconut, sugar, cinnamon and nutmeg, mix well and cook on low to medium heat just until all the liquid has evaporated. Remove from heat and add the almond extract, mix well, place in a bowl and set aside to cool. When dough is ready, punch down in the middle and turn out onto a lightly floured surface and gently knead for about 30 seconds then divide the dough into 8 equal parts; roll each piece into a ball or place on work board surface and roll in the palm of your hand then place each ball on a nonstick tray and cover with plastic wrap. Roll out each dough ball into a circle and place about 1 1/2 tablespoons of the coconut mixture then lift each end and seal edges; flip over and push down on the pointed edges with seam down onto a lightly greased nonstick tray or baking pan. Continue until all the dough balls are done cover with a tea towel and place in the microwave or a warm place for about 45 minutes to an hour. Brush dough with the melted butter and bake for 16 minutes. Simple Syrup 1/4 cup water 1/4 cup sugar In a small saucepan stir well and reduce liquid to about half the amount on low heat, stirring occasionally. Remove the turnovers from oven and brush with some simple syrup and place back in the oven for another 2 minutes; remove from oven; brush with a little more syrup and sprinkle with a little brown sugar and let cool.
