By uniting these two rich, distinct components, we create a Palak Gosht gravy that is velvety smooth, perfectly balanced, and utterly irresistible. Ingredients: • Desi Ghee: 1 cup (split into two $\frac{1}{2}$ cup portions) • Mutton: 1 kg • Spinach (Palak): 1 large bunch (boiled and blended) • Aromatics: 2 large onions (sliced), 1 tbsp Ginger-Garlic Paste, 2 blended tomatoes. • Whole Spices: Cinnamon stick, 6 Black peppercorns, 5 Cloves, 2 Black cardamoms, 2 Bay leaves. • Powdered Spices: 2 tbsp Coriander powder, 1 tbsp Crushed red chilies, 1 tsp Turmeric, Salt (to taste). • Finish: 1 chopped Green chili, 1 tsp Roasted & ground cumin. Method Summary: 1. In $\frac{1}{2}$ cup ghee, fry onions with whole spices. Add ginger-garlic paste and mutton. 2. Add powdered spices, green chili, and tomato paste. Add water, cover, and cook until the mutton is fork-tender. 3. In a separate pan, heat the remaining $\frac{1}{2}$ cup ghee, add the blended spinach paste, and sauté until deeply fragrant. 4. Combine the cooked mutton and the sautéed spinach. Simmer gently for 6 minutes. 5.
