Greek Inspired Chicken Sheet Pan Dinner Preheat the oven to 425 degrees Prepare the marinate: ½ cup olive oil Juice of 1 lemon 1 tsp Dijon mustard 4 cloves of garlic minced 2 tsp oregano 1 tsp thyme 1 tsp salt ½ tsp pepper Mix well and pour 2/3 of the marinate into a Ziplock bag big enough to hold 6 chicken thighs. Set aside to marinate while you prepare everything else. Into bite size pieces cut 1 orange or yellow pepper ½ large red onion 1 large or two small zucchinis Dump the veggies on a lined sheet tray. Add 1 pint of cherry tomatoes Pour the remaining marinate over the veggies and make sure that each piece gets coated. Settle the veggies across the tray. I make room for the chicken thighs to side on the foil. Now pop this in to your preheated over and set a timer for 35 minutes. Once the timer goes off sprinkle 1/3 cup of feta cheese over the hot pan and ½ cup kalamata olives. Return to the oven for 10 minutes. Italian Sheet Pan Pork Chop Dinner Preheat the oven to 400 degrees 5 medium to large carrots peeled and cut into coins 1 lb baby potatoes cut in half 3 or 4 pork chops about ¾ inch thick Add the carrots to the sheet pan and add a tbsp of olive oil. Mix well and sprinkle with dill weed, S&P. Add the potatoes to the sheet pan and add 2 tbsps of olive oil. Mix well and sprinkle with some seasoning salt and pepper. Put the carrots on one end of the pan and the potatoes on the other leaving room for the chops in the middle. For the pork chops S&P them and add a wee bit of oil. In a separate dish add 1/3 cup parmesan cheese, ¼ tsp each of onion powder and garlic power, one package of Italian dressing mix, and 1 tsp oregano. Mix well and coat the chops. Add them to the sheet tray and pop it into a preheated 400-degree oven and set the timer for 30 minutes. Check to make sure the meat temperature reached 145 degrees on your thermometer and that the potatoes are cooked. If not cook for a future 5 minutes.
