Let the potatoes sit for 30 minutes. Heat 2 inches of avocado oil in a cast iron skillet to 350 degrees. When the oil has reached temperature, pat them dry on paper towel. Place in the hot oil in small batches. Cook for 3-4 minutes, until golden brown. Take the potatoes out of the oil using a spider or slotted spoon. Drain on paper towel. Sprinkle with salt and BBQ seasoning to taste. Enjoy! Dr. J’s Sweet BBQ Rub Recipe Makes: approx. ¾ C ¼ C dark brown sugar 1 T kosher salt 2 tsp. ground black pepper 2 tsp. smoked paprika 2 tsp. garlic powder 2 tsp. onion powder 1 tsp. chili powder 1 tsp. ground coriander 1 tsp. ground cumin 1 tsp. ground mustard ½ tsp. ancho chili powder Combine all ingredients in a bowl. Use a fork to break up any clumps of the brown sugar.
