Pumpkin Bread, Bread Machine Recipe Serves: about 12 slices Dry ingredients: 2 C all-purpose flour ½ C cane sugar ½ C light brown sugar 2 ½ tsp. pumpkin pie spice 1 tsp. baking soda ½ tsp. baking powder ½ tsp. kosher salt Wet ingredients: 1 stick unsalted butter, melted slightly and cooled 2 large eggs, whisked 1 C pumpkin puree 1 tsp. pure vanilla extract Mix all the dry ingredients in a bowl until combined (don’t skip this step). Place all the wet ingredients into the pan of the bread machine. Pour the dry ingredients on top of the wet ingredients in the pan. Secure the pan in the machine. Set your machine for either quick, quick bread, or cake. This can be tricky because each machine is different. The cooking time should between 1:40 and 1:50 minutes. Please look at the booklet that came with your machine. My machine is a KBS. I set my machine for quick bread, 2-pound loaf, light crust setting. This will wet for 1:43 total time. Once the timer goes off, I let the bread sit in the machine for 10 minutes. I then take it out and place on a wire rack for another 10 minutes. Then using a thin rubber spatula, go around the edge of the bread to loosen it. Turn it out onto the wire rack to cool completely. Enjoy! Note: this is one of my favorite sweet quick breads.
