Banana Bread made with Chickpea Flour Ingredients: 3 Ripe bananas – mashed + optional 1 more to slice for top ¼ cup maple syrup 2 tsp vanilla 2 flax eggs (which is 2 tbsp of ground flax seeds & 6 tbsp water mixed together, and let sit for 10 minutes to thicken up) ¼ cup melted coconut oil 1 tsp apple cider vinegar 1.5 cups of chickpea flour (also known as Garbanzo flour) + 2 tbsp of flour to coat chocolate chips 1 tsp baking soda ½ tsp cinnamon ¼ tsp salt ¼ cup vegan chocolate chips Directions: First make the 2 flax eggs by mixing the ground flax seed with water, mix and let sit to thicken up In a large bowl, add: 1.5cups of chickpea flour, cinnamon, baking soda and salt. Stir to incorporate together. In another large bowl, add 3 bananas and mash them up, add maple syrup, vanilla, coconut oil, apple cider vinegar, and flax eggs. Mix well In a smaller bowl, add 2 tbsp of chickpea flour and add chocolate chips, mix well to ensure each chocolate chip is coated in the flour. Sift flour out and discard. Add Chocolate chips to banana mixture and mix well. Add banana mixture to flour mixture and mix well. Spray a loaf pan with non stick spray. Pour the batter into the loaf pan. Optional: Slice another banana on top Bake at 350F for 40-50 or until an inserted toothpick comes out clean. Let cool down and slice and serve Enjoy!
